Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
3 large eggs
1 cup honey
1 cup buttermilk
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each addition. Beat in honey.
Gradually add the flour mixture to the butter mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.
Pour batter into prepared pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Let cake cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
Tips
For extra flavor, brush the warm cake with additional honey after baking.
