Ingredients
2 cups all-purpose flour (plus more for dusting)

Instructions
Mound the flour on a clean work surface and make a well in the center. Crack the eggs into the well, add olive oil and salt.
Using a fork, gradually whisk the eggs, incorporating the flour from the sides until a shaggy dough forms.
Knead the dough for 8-10 minutes until smooth and elastic. Wrap in plastic wrap and rest for 30 minutes.
Divide the dough into 4 pieces. Roll each piece through a pasta machine on progressively thinner settings, or roll out with a rolling pin to desired thinness.
Cut the rolled dough into desired shapes: tagliatelle, fettuccine, or pappardelle. Dust with flour to prevent sticking.
