Ingredients
3 cups rolled oats
1 cup mixed nuts (e.g., almonds, walnuts, pecans), roughly chopped
1/2 cup seeds (e.g., pumpkin, sunflower)
1/2 cup unsweetened shredded coconut
1/2 cup maple syrup or honey
1/4 cup coconut oil or melted butter
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup dried fruit (e.g., raisins, cranberries, chopped apricots)
Instructions
Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
In a large bowl, combine oats, nuts, seeds, coconut, salt, and cinnamon.
In a small saucepan, warm maple syrup and coconut oil over low heat until melted. Remove from heat and stir in vanilla.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Bake for 20-25 minutes, stirring halfway through, until golden brown.
Remove from oven and let cool completely on the baking sheet (it will crisp up as it cools).
Once cool, stir in dried fruit.
Store in an airtight container at room temperature for up to 2 weeks.
Tips
For extra crunch, add 1/2 cup of puffed rice or quinoa before baking.
Feel free to swap nuts, seeds, and dried fruit based on preference.
