  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Spread oats and nuts on a baking sheet and toast in the oven for 8-10 minutes, stirring once, until lightly golden. Transfer to a large bowl.
  3. In a small saucepan over medium heat, combine butter, honey, brown sugar, and salt. Cook, stirring, until butter is melted and sugar dissolves. Remove from heat and stir in vanilla.
  4. Pour the wet mixture over the toasted oats and nuts. Add dried fruit and seeds. Stir until everything is well coated.
  5. Transfer mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass. Press very firmly to ensure bars hold together.
  6. Bake for 15-18 minutes, until golden brown around the edges. Do not overbake or bars will be hard.
  7. Let cool completely in the pan on a wire rack (about 1 hour). Then refrigerate for 30 minutes to set.
  8. Lift out using parchment overhang and cut into 12 bars.
