Ingredients
- 2 cups rolled oats
- 1 cup nuts (almonds, walnuts, or pecans), chopped
- 1/2 cup seeds (pumpkin or sunflower)
- 1/2 cup dried fruit (cranberries, raisins, or apricots), chopped
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil or unsalted butter
- 1/2 cup nut butter (peanut, almond, or cashew)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- Spread oats, nuts, and seeds on a baking sheet. Toast in oven for 8-10 minutes until lightly golden. Transfer to a large bowl and add dried fruit.
- In a small saucepan over medium heat, combine honey, coconut oil, nut butter, vanilla, and salt. Stir until melted and smooth.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Transfer mixture to the prepared pan. Press down firmly and evenly using a spatula or the bottom of a glass.
- Bake for 15-18 minutes until edges are golden brown. Cool completely in the pan before cutting into 12 bars.
Tips
- For extra crunch, add 1/4 cup shredded coconut or dark chocolate chips after baking.
