Ingredients
4 cups whole milk
2 tablespoons plain yogurt with live cultures (as starter)
1/4 cup honey or maple syrup (optional)
1 teaspoon vanilla extract (optional)
1 cup fresh fruit, chopped (optional)
Instructions
1. In a heavy-bottomed pot, heat milk over medium heat until it reaches 180°F (82°C), stirring occasionally to prevent scorching. Remove from heat and let cool to 110°F (43°C).
2. In a small bowl, whisk 1 cup of the warm milk with the starter yogurt until smooth. Pour this mixture back into the pot and stir gently.
3. Pour the milk mixture into clean jars or a container. Cover with a lid or plastic wrap. Place in a warm spot (e.g., oven with light on, or a yogurt maker) and incubate undisturbed for 6-12 hours until set and tangy.
4. Once set, refrigerate for at least 4 hours to thicken. If desired, stir in honey, vanilla, or fruit before serving.
