Hiyayakko is a simple Japanese chilled tofu dish, perfect as a light appetizer or side dish on a hot day. This recipe uses silken tofu topped with classic savory garnishes.

Ingredients
1 block (14 oz) silken tofu, chilled
2 tablespoons soy sauce
1 teaspoon sesame oil
1 green onion, thinly sliced
1 tablespoon dried bonito flakes (katsuobushi)
1 teaspoon grated fresh ginger
1/2 teaspoon toasted white sesame seeds
Instructions
Drain the tofu and gently pat dry with paper towels. Cut into 4 equal slices.
Arrange tofu slices on two small plates.
Drizzle soy sauce and sesame oil over each serving.
Top with sliced green onion, bonito flakes, grated ginger, and sesame seeds.
Serve immediately while still chilled.
Tips
For a vegan version, omit bonito flakes and use a drizzle of ponzu sauce instead of soy sauce.
Hiyayakko is best eaten right away; do not refrigerate after topping.
You can also add a small mound of grated daikon radish or a pinch of shichimi togarashi for extra flavor.
