Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1/2 cup raw almonds
1/2 cup raw cashews
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
2 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Pat chickpeas dry with a clean towel, removing any loose skins.
In a bowl, combine chickpeas, almonds, cashews, pumpkin seeds, sunflower seeds, maple syrup, olive oil, smoked paprika, garlic powder, and salt. Toss until well coated.
Spread mixture in a single layer on the prepared baking sheet.
Bake for 25-30 minutes, stirring halfway through, until chickpeas are crunchy and nuts are golden brown.
Let cool completely on the baking sheet; mixture will crisp further as it cools.
Break apart any clumps and store in an airtight container.
Tips
For extra heat, add 1/4 teaspoon cayenne pepper.
Store at room temperature for up to 2 weeks.
Adjust sweetness by adding more or less maple syrup.
