Ingredients
4 salted herring fillets (about 12 oz total)
1 cup sour cream
1/2 cup heavy cream
1 small red onion, thinly sliced
1 apple, peeled, cored, and diced
2 tablespoons chopped fresh dill
1 tablespoon white vinegar
1 teaspoon sugar
1/4 teaspoon white pepper
Fresh dill sprigs for garnish
Instructions
Soak herring fillets in cold water for 2 hours, changing water once, then drain and pat dry. Cut into bite-sized pieces.
In a medium bowl, whisk together sour cream, heavy cream, vinegar, sugar, and white pepper until smooth.
Add herring pieces, red onion, apple, and chopped dill. Stir gently to combine.
Cover and refrigerate for at least 2 hours, or overnight, to allow flavors to meld.
Taste and adjust seasoning with salt or more vinegar if needed. Garnish with dill sprigs before serving.
Tips
Serve chilled on crispbread or rye bread with boiled potatoes.
