Ingredients
1 lb russet potatoes, peeled
1/2 lb ground pork
1 small onion, finely chopped
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
2 tbsp vegetable oil, divided
Instructions
Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
In a large bowl, combine the squeezed potatoes, ground pork, onion, salt, pepper, and paprika. Mix well.
Heat 1 tablespoon of oil in a large non-stick skillet over medium-high heat. Scoop about 1/4 cup of the potato-pork mixture and flatten into a patty. Repeat to make 4 patties.
Cook the patties for 4-5 minutes per side, until golden brown and cooked through. Add more oil if needed.
Serve hot with ketchup or sour cream if desired.
Tips
For extra crispiness, let the grated potatoes soak in cold water for 10 minutes, then squeeze dry.
