Ingredients
1 1/2 pounds ground beef (80/20 blend)
1 teaspoon salt
1/2 teaspoon black pepper
4 hamburger buns, split
4 slices cheddar cheese
4 leaves lettuce
4 slices tomato
1/2 red onion, thinly sliced
4 tablespoons ketchup
4 tablespoons mustard
Instructions
Preheat a grill or cast-iron skillet over medium-high heat.
Divide the ground beef into 4 equal portions and shape into patties about 3/4-inch thick. Season both sides with salt and pepper.
Cook patties for 4 minutes per side for medium, or until desired doneness. During the last minute, top each patty with a slice of cheese and cover to melt.
Toast the buns on the grill or in a separate pan until lightly golden.
Assemble burgers: place a lettuce leaf on the bottom bun, then the patty with cheese, followed by tomato slices, red onion, ketchup, and mustard. Top with the other bun half.
Tips
Handle the meat as little as possible for a tender patty.
