Ingredients
2 cups finely chopped cooked ham
2 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
1/4 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon finely chopped onion
1/4 teaspoon black pepper
8 slices bread
Instructions
In a medium bowl, combine the chopped ham, chopped hard-boiled eggs, sweet pickle relish, mayonnaise, mustard, onion, and black pepper. Mix well until evenly combined.
Taste and adjust seasoning if needed.
Spread the ham salad evenly on 4 slices of bread. Top with remaining bread slices.
Cut sandwiches in half and serve immediately, or refrigerate until ready to serve.
Tips
For extra crunch, add 1/4 cup finely chopped celery.
