Ingredients
1 (9-inch) unbaked pie crust
1 cup diced cooked ham
1 cup shredded Swiss cheese
4 large eggs
1 1/2 cups heavy cream
1/2 cup whole milk
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon ground nutmeg
Instructions
Preheat oven to 375°F (190°C).
Place the pie crust in a 9-inch pie dish, crimp edges, and prick bottom with fork. Line with parchment and fill with pie weights or dried beans. Bake for 10 minutes, then remove weights and parchment and bake 5 more minutes until lightly golden.
Sprinkle ham and Swiss cheese evenly over the bottom of the pre-baked crust.
In a medium bowl, whisk together eggs, heavy cream, milk, salt, pepper, and nutmeg until smooth.
Pour the egg mixture over the ham and cheese.
Bake for 35-40 minutes, until the center is set and a knife inserted near the center comes out clean. Let cool for 10 minutes before slicing.
Tips
For a crispier crust, brush the bottom with a beaten egg white before adding filling.
Leftover quiche can be refrigerated for up to 3 days; reheat in a 350°F oven.
Serve warm or at room temperature with a green salad.
