Ingredients
2 large eggs
1 tablespoon unsalted butter
1/4 cup diced cooked ham
1/4 cup shredded Swiss cheese
Salt and freshly ground black pepper to taste
Instructions
In a small bowl, beat the eggs with a fork until yolks and whites are well combined. Season with a pinch of salt and pepper.
Melt butter in an 8-inch nonstick skillet over medium heat, swirling to coat the pan.
Pour in the beaten eggs and let cook undisturbed for about 30 seconds until edges begin to set.
Using a spatula, gently push cooked edges toward the center, tilting the pan to allow uncooked eggs to flow to the edges. Repeat until eggs are mostly set but still soft on top.
Sprinkle ham and Swiss cheese evenly over one half of the omelet.
Fold the other half over the filling using the spatula. Slide the omelet onto a plate and serve immediately.
