Ingredients
4 slices ham (about 4 oz)
2 tablespoons butter
4 large eggs
Salt to taste
Black pepper to taste
Optional: fresh parsley for garnish
Instructions
Heat a large non-stick skillet over medium heat and add 1 tablespoon butter. Once melted, add ham slices and cook for 1-2 minutes per side until lightly browned. Remove ham to a plate and keep warm.
Reduce heat to medium-low and add remaining 1 tablespoon butter to the skillet. Crack eggs into the skillet, being careful not to break yolks. Season with salt and pepper.
Cook eggs to desired doneness: about 3 minutes for sunny-side up (whites set, yolks runny), or flip and cook 1-2 minutes more for over-easy. Serve eggs alongside ham, garnished with parsley if desired.
Tips
For crispier ham, cook a bit longer until edges start to curl.
Use leftover ham or thick-cut deli ham for best flavor.
