Ingredients
2 large eggs
1 tablespoon milk
Salt and freshly ground black pepper to taste
1 tablespoon unsalted butter
1/4 cup diced cooked ham
1/4 cup shredded cheese (such as Gruyère, cheddar, or Swiss)
Instructions
In a small bowl, whisk together eggs, milk, salt, and pepper until well combined and slightly frothy.
Heat an 8-inch nonstick skillet over medium heat. Add butter and swirl to coat the pan.
Pour the egg mixture into the skillet and let it cook undisturbed for about 30 seconds until the edges begin to set.
Using a spatula, gently push the cooked edges toward the center, tilting the pan to allow uncooked egg to flow to the edges. Repeat until the omelette is mostly set but still slightly runny on top.
Sprinkle the ham and cheese evenly over one half of the omelette.
Fold the other half over the filling using the spatula. Cook for another 30 seconds to melt the cheese.
Slide the omelette onto a plate and serve immediately.
