Ingredients
2 tablespoons unsalted butter
1 medium onion, diced
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups whole milk
1 cup chicken broth
2 cups cooked ham, cubed
2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C). Grease a 2-quart baking dish.
In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Sprinkle flour over onion mixture and stir constantly for 1 minute. Gradually whisk in milk and chicken broth. Cook, stirring, until thickened, about 3-4 minutes.
Stir in ham, beans, thyme, salt, and pepper. Pour mixture into prepared baking dish.
In a small bowl, combine panko and Parmesan cheese. Sprinkle over casserole.
Bake for 25-30 minutes, until bubbly and topping is golden brown. Let stand 5 minutes before serving.
Tips
To make ahead, assemble casserole without topping, cover, and refrigerate up to 24 hours. Add topping just before baking.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Substitute leftover turkey or chicken for ham if desired.
