Haluski is a comforting Polish dish of buttery egg noodles and caramelized cabbage, often finished with crispy bacon for a hearty, satisfying meal.

Ingredients
8 oz wide egg noodles
6 slices bacon, chopped
1 large onion, thinly sliced
1 small head green cabbage (about 1.5 lbs), cored and thinly sliced
4 tbsp unsalted butter
Salt and black pepper to taste
Instructions
Bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente. Drain and set aside.
In a large skillet or Dutch oven, cook bacon over medium heat until crispy, about 5-7 minutes. Transfer bacon to a paper towel-lined plate, leaving about 2 tablespoons of drippings in the pan.
Add butter to the pan with the bacon drippings. Once melted, add onion and cook, stirring occasionally, until softened, about 5 minutes.
Add shredded cabbage to the pan. Cook, stirring occasionally, until the cabbage is tender and caramelized, about 15-20 minutes. Season with salt and pepper.
Add the cooked noodles to the pan with the cabbage mixture. Toss to combine and heat through, about 2 minutes.
Serve topped with the crispy bacon.
Tips
To make it vegetarian, omit bacon and use 4 tbsp butter or oil.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet over medium heat with a splash of water or broth.
