2 cups shaved ice
1/2 cup sweetened red beans (or kidney beans)
1/2 cup sweetened garbanzo beans (chickpeas)
1/2 cup macapuno (coconut sport) strings
1/2 cup nata de coco (coconut gel), drained
1/2 cup kaong (sugar palm fruit), drained
1/2 cup saba bananas, sliced and caramelized
1/2 cup sweetened jackfruit strips
1/2 cup ube halaya (purple yam jam)
1/2 cup evaporated milk
4 scoops ube ice cream (or vanilla)
4 tablespoons leche flan (optional, cut into cubes)
4 tablespoons pinipig (toasted rice flakes) for topping
Instructions
Prepare all the sweet toppings: drain canned beans, fruits, and gels. Caramelize saba bananas by pan-frying with sugar until golden.
In a tall glass or bowl, add a layer of shaved ice.
Arrange a small portion of each topping (red beans, garbanzos, macapuno, nata de coco, kaong, bananas, jackfruit, ube halaya) over the ice.
Add another layer of shaved ice, then more toppings, repeating until glass is full.
Drizzle evaporated milk over the top.
Add a scoop of ube ice cream and top with leche flan cubes and pinipig.
Serve immediately with a long spoon, mixing everything together before eating.
