Ingredients
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1 tablespoon coconut oil
24 candy eyeballs
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix peanut butter, sugar, egg, and vanilla until a dough forms.
Roll dough into 1-inch balls and place on prepared baking sheet. Flatten slightly with a fork.
Bake for 8-10 minutes until edges are golden. Let cool on sheet for 5 minutes, then transfer to wire rack to cool completely.
In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
Transfer melted chocolate to a piping bag or zip-top bag with a tiny corner snipped off.
Pipe a small dot of chocolate onto each cookie for the spider body, then pipe 8 thin legs radiating from the dot.
Place a candy eyeball on the chocolate dot to create the spider's head. Let set until chocolate hardens.
Tips
For a spookier look, use black gel icing to draw spider legs instead of chocolate.
Store in an airtight container at room temperature for up to 5 days.
You can substitute almond butter for peanut butter if desired.
