Ingredients
1/2 cup white rice (or other grain like oats, barley, or millet)
4 cups water or milk (or a combination)
Pinch of salt (optional)
Sweetener to taste: sugar, honey, or maple syrup (optional)
Flavorings: cinnamon, vanilla, or fruit (optional)
Instructions
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and water (or milk). Add a pinch of salt if using.
Bring to a boil over medium-high heat, then reduce heat to low and cover.
Simmer for 30-45 minutes, stirring occasionally, until the rice is very soft and the mixture has thickened to a porridge-like consistency.
If desired, stir in sweetener and flavorings. Adjust consistency by adding more liquid if too thick.
Serve warm, optionally topped with fresh fruit, nuts, or a drizzle of honey.
Tips
For a creamier gruel, use milk instead of water or add a splash of cream at the end.
Leftover gruel can be refrigerated for up to 3 days; reheat with a little extra liquid.
To make savory gruel, omit sweetener and add a pinch of salt, pepper, and herbs or a poached egg on top.
