Ingredients
2 tablespoons vegetable oil
2 large onions, finely chopped
2 cloves garlic, minced
1 kg (2.2 lbs) ground beef
2 tablespoons curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 can (400g) chopped tomatoes
2 tablespoons tomato paste
1 cup beef broth
2 bay leaves
Salt and pepper to taste
2 tablespoons chopped fresh parsley (for garnish)
Instructions
Heat oil in a large pot over medium heat. Add onions and cook until soft and translucent, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Increase heat to high, add ground beef, and cook until browned, breaking it up with a spoon, about 8 minutes.
Stir in curry powder, turmeric, cumin, and coriander; cook for 2 minutes.
Add chopped tomatoes, tomato paste, beef broth, and bay leaves. Season with salt and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, stirring occasionally, until the stew thickens and flavors meld.
Remove bay leaves. Adjust seasoning if needed. Garnish with fresh parsley before serving.
Tips
Serve over rice or with crusty bread to soak up the gravy.
For a milder flavor, reduce curry powder to 1 tablespoon.
