Instructions
- Slice zucchini lengthwise into 1/4-inch-thick ribbons using a mandoline or vegetable peeler. Discard the seedy core if desired.
- Toss zucchini ribbons with 1 tablespoon olive oil, salt, and pepper. Preheat a grill or grill pan to medium-high heat.
- Grill zucchini ribbons in batches for 1-2 minutes per side, until charred and tender. Transfer to a large plate.
