Ingredients
4 tuna steaks (6 oz each, about 1 inch thick)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup fresh parsley leaves, finely chopped
1/2 cup fresh cilantro leaves, finely chopped
3 cloves garlic, minced
1 shallot, finely chopped
1/2 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon red pepper flakes
1/4 teaspoon dried oregano
Instructions
Make the chimichurri: In a bowl, combine parsley, cilantro, garlic, shallot, extra-virgin olive oil, red wine vinegar, lemon juice, red pepper flakes, and oregano. Stir well and set aside.
Preheat a grill or grill pan to high heat (about 450°F).
Brush tuna steaks with 2 tablespoons olive oil and season both sides with salt and pepper.
Grill tuna for 2-3 minutes per side for medium-rare (adjust time to your preference).
Remove tuna from grill and let rest for 2 minutes.
Serve tuna steaks topped with a generous spoonful of chimichurri sauce.

For best results, use sushi-grade tuna and cook to medium-rare to avoid dryness.
