Ingredients
2 T-bone steaks (about 1 inch thick, 16 oz each)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter, softened
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 teaspoon fresh thyme leaves
1 small garlic clove, minced
1/2 teaspoon lemon zest
Instructions
Remove steaks from refrigerator 30 minutes before grilling to bring to room temperature. Pat dry with paper towels.
Make herb butter: In a small bowl, combine softened butter, parsley, chives, thyme, garlic, and lemon zest. Mix well, then shape into a log using plastic wrap. Refrigerate until firm.
Preheat grill to high heat (450-500°F). Brush steaks with olive oil and season generously with salt and pepper on both sides.
Grill steaks for 4-5 minutes per side for medium-rare (internal temperature 130-135°F), or adjust time to desired doneness. Use tongs to flip only once.
Remove steaks from grill and let rest for 5 minutes. Top each steak with a slice of herb butter just before serving.
