Ingredients
4 (6 oz) skin-on salmon fillets
2 tbsp olive oil
2 cloves garlic, minced
1 tsp kosher salt
1/2 tsp black pepper
1 lemon, sliced into rounds
2 tbsp fresh dill, chopped (or 1 tsp dried)
Instructions
Preheat grill to medium-high heat (about 400°F). Clean and oil the grates.
In a small bowl, mix olive oil, garlic, salt, and pepper. Brush mixture all over salmon fillets, including skin.
Place salmon skin-side down on the grill. Cover and cook for 5-7 minutes, depending on thickness, without moving.
Carefully flip salmon using a wide spatula. Place lemon slices on top. Grill for another 3-5 minutes until fish is opaque and flakes easily.
Remove from grill, sprinkle with fresh dill, and serve immediately.
Tips
For even cooking, let salmon sit at room temperature for 10 minutes before grilling.
If using a gas grill, keep lid closed as much as possible to maintain heat.
Leftover grilled salmon keeps in the fridge for up to 2 days; flake over salads or pasta.
