Ingredients
2 ribeye steaks, about 1 inch thick (12 oz each)
1 tablespoon kosher salt
1 teaspoon black pepper
1 tablespoon olive oil
2 cloves garlic, smashed
2 sprigs fresh rosemary
Instructions
Remove steaks from refrigerator 30 minutes before grilling to bring to room temperature. Pat dry with paper towels.
Season both sides generously with salt and pepper, pressing the seasoning into the meat.
Preheat grill to high heat (450-500°F). Clean and oil the grates.
Rub steaks with olive oil, then place on grill. Cook for 4-5 minutes without moving to get a good sear.
Flip steaks and add garlic and rosemary to the grill. Cook for another 4-5 minutes for medium-rare (internal temp 130-135°F). Adjust time for desired doneness.
Remove steaks from grill and let rest for 5 minutes before serving. Discard garlic and rosemary.
Tips
For best results, use a meat thermometer to check doneness.
Letting the steak rest is crucial for juicy results.
Serve with a pat of butter on top for extra richness.
