Ingredients
- 2 heads radicchio (about 12 oz total)
- 3 tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 tbsp balsamic glaze (store-bought or homemade)
Instructions
- Preheat an outdoor grill or grill pan to medium-high heat (about 400°F).
- Cut each radicchio head in half lengthwise through the core, leaving the core intact to hold leaves together.
- Brush cut sides with olive oil and season with salt and pepper.
- Place radicchio cut-side down on the grill. Cook without moving for 3-4 minutes until grill marks appear and edges are slightly charred.
- Flip and grill the rounded side for 2-3 minutes more until just tender but still slightly firm.
- Transfer to a platter, cut-side up. Drizzle with balsamic glaze and serve warm or at room temperature.
Tips
- For a homemade balsamic glaze, simmer 1/2 cup balsamic vinegar with 1 tbsp brown sugar until syrupy, about 5 minutes.
- Serve as a side to grilled meats or fish, or chop and toss into salads.
- Leftovers can be stored in the fridge for up to 2 days; reheat briefly or serve cold.
