Ingredients
4 large portabella mushroom caps, stems removed
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices provolone or Swiss cheese
4 hamburger buns, split and toasted
1 cup fresh spinach leaves
1 large tomato, sliced
1/2 red onion, thinly sliced
4 tablespoons mayonnaise or aioli
Instructions
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
Place mushroom caps in a shallow dish and pour marinade over them. Let marinate for at least 15 minutes, turning once.
Preheat grill to medium-high heat (about 400°F).
Grill mushrooms for 4-5 minutes per side, until tender and grill marks appear. During the last minute, top each mushroom with a slice of cheese and cover grill to melt.
Spread mayonnaise on toasted bun halves. Place a cheese-topped mushroom on each bottom bun, then layer with spinach, tomato slices, and red onion. Close burgers and serve immediately.
Tips
For extra flavor, add a dollop of pesto or roasted red pepper spread.
If using a grill pan, cook over medium-high heat for same times.
Leftover mushrooms can be sliced and used in salads or sandwiches.
