Ingredients
4 bone-in pork chops, about 1-inch thick
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh lemon juice
Instructions
In a small bowl, mix olive oil, garlic, thyme, rosemary, salt, pepper, and lemon juice to make a marinade.
Place pork chops in a resealable plastic bag or shallow dish. Pour marinade over chops, turning to coat. Refrigerate for at least 30 minutes, or up to 4 hours.
Preheat grill to medium-high heat (about 400°F).
Remove pork chops from marinade and let excess drip off. Grill chops for 4-6 minutes per side, or until internal temperature reaches 145°F.
Remove from grill and let rest for 5 minutes before serving.
Tips
For best results, use a meat thermometer to ensure doneness.
Letting the chops rest after grilling keeps them juicy.
