4 bone-in pork chops, about 1 inch thick
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
2 tablespoons olive oil
4 tablespoons unsalted butter, softened
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 teaspoon fresh thyme leaves
1 clove garlic, minced
1/2 teaspoon lemon zest
1/4 teaspoon salt
Instructions
Preheat grill to medium-high heat (about 400°F).
In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon pepper, garlic powder, and smoked paprika. Pat pork chops dry and rub both sides with the spice mixture. Drizzle with olive oil and rub to coat.
Grill pork chops for 4-5 minutes per side, or until internal temperature reaches 145°F. Let rest for 5 minutes.
While pork chops rest, make herb butter: In a small bowl, mix softened butter, parsley, chives, thyme, minced garlic, lemon zest, and 1/4 teaspoon salt until well combined.
