Ingredients
2 New York strip steaks (10-12 oz each, about 1 inch thick)
1 tablespoon kosher salt
1 teaspoon black pepper
1 tablespoon vegetable oil
2 tablespoons unsalted butter
2 cloves garlic, smashed
2 sprigs fresh rosemary
2 sprigs fresh thyme
Instructions
Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature. Pat dry with paper towels.
Season both sides generously with salt and pepper. Brush with oil.
Preheat grill to high heat (450-500°F). Clean and oil grates.
Grill steaks over direct heat, lid closed, for 4-5 minutes per side for medium-rare (125°F internal temperature). Flip once.
During the last minute of grilling, add butter, garlic, rosemary, and thyme to a small cast iron skillet or directly on the grill. Let butter melt and baste steaks.
Transfer steaks to a cutting board, tent loosely with foil, and rest for 5 minutes.
Slice against the grain and serve with herb butter spooned over top.
Tips
Use a meat thermometer for accuracy: 125°F for medium-rare, 135°F for medium.
Let steaks rest before slicing to retain juices.
