Ingredients
- 4 ripe but firm nectarines, halved and pitted
- 2 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 pint vanilla ice cream
- Optional: fresh mint leaves for garnish
Instructions
- Preheat an outdoor grill or grill pan to medium-high heat.
- In a small bowl, mix melted butter, brown sugar, and cinnamon.
- Brush the cut sides of the nectarine halves with the butter mixture.
- Place nectarines cut-side down on the grill. Cook for 3-4 minutes until grill marks appear and fruit softens slightly.
- Flip and grill for another 2-3 minutes, until tender and caramelized.
- Remove from grill and let cool for 1 minute.
- Scoop vanilla ice cream into bowls or plates. Top with grilled nectarine halves (2 per serving). Garnish with mint if desired. Serve immediately.
Tips
- Choose nectarines that are ripe but still firm so they hold up on the grill.
- For extra flavor, add a splash of bourbon or vanilla extract to the butter mixture.
