Ingredients
4 lobster tails (about 6 oz each)
1/2 cup unsalted butter, softened
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Using kitchen shears, cut the top shell of each lobster tail lengthwise down the center, stopping at the tail fin. Gently loosen the meat from the shell, keeping it attached at the tail. Lift the meat through the slit and rest it on top of the shell.
Preheat grill to medium-high heat (about 400°F).
In a small bowl, combine softened butter, minced garlic, parsley, lemon juice, lemon zest, salt, pepper, and paprika until well blended.
Brush the lobster meat generously with half of the garlic herb butter.
Place lobster tails shell-side down on the grill. Cover and cook for 5 minutes.
Flip the tails so the meat side is down. Baste with remaining butter. Grill for another 4-5 minutes, until the meat is opaque and lightly charred.
Remove from grill and serve immediately with extra melted butter if desired.
Tips
To prevent curling, insert a skewer lengthwise through each tail before grilling.
Adjust grilling time based on lobster tail size; cook until internal temperature reaches 140°F.
Leftover garlic herb butter can be stored in the fridge for up to a week and used on other seafood or bread.
