Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
1/4 cup olive oil
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Lemon wedges and fresh herbs for garnish (optional)
Instructions
In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, turning to coat. Seal and refrigerate for at least 30 minutes, or up to 4 hours.
Preheat grill to medium-high heat (about 400°F). Lightly oil the grates.
Remove chicken from marinade and discard excess marinade. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F and juices run clear.
Let chicken rest for 5 minutes before serving. Garnish with lemon wedges and fresh herbs if desired.
