Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
3 tablespoons olive oil, divided
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup balsamic vinegar
2 tablespoons honey
1 clove garlic, minced
5 oz baby arugula
1/2 cup shaved Parmesan cheese
Instructions
Preheat grill to medium-high heat (about 400°F).
Brush chicken breasts with 1 tablespoon olive oil and season with salt and pepper.
Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
Meanwhile, in a small saucepan, combine balsamic vinegar, honey, and garlic. Bring to a simmer over medium heat, then reduce heat to low and cook until thickened and reduced by half, about 5 minutes. Remove from heat.
In a large bowl, toss arugula with remaining 2 tablespoons olive oil and a pinch of salt.
