Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
4 hamburger buns, split
4 slices cheddar cheese
4 leaves lettuce
1 tomato, sliced
1/2 red onion, thinly sliced
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
Instructions
Preheat grill to medium-high heat (about 400°F).
In a small bowl, mix olive oil, salt, pepper, garlic powder, and smoked paprika. Brush mixture onto both sides of chicken breasts.
Grill chicken for 5-6 minutes per side, or until internal temperature reaches 165°F. During the last minute, top each breast with a slice of cheese and close grill lid to melt.
Toast buns on grill for about 1 minute, until lightly golden.
In a small bowl, combine mayonnaise, Dijon mustard, and honey to make the sauce.
Spread sauce on both halves of each bun. Place lettuce, tomato, and red onion on bottom bun, then add grilled chicken with cheese. Top with bun and serve immediately.
Tips
For extra flavor, marinate chicken in the oil-spice mixture for 30 minutes before grilling.
Substitute chicken with a plant-based patty for a vegetarian version.
Serve with sweet potato fries or a side salad.
Leftover grilled chicken can be sliced and used in salads or wraps.
