A classic club sandwich gets a smoky upgrade with grilled chicken breast, crispy bacon, fresh lettuce, tomato, and creamy mayo on toasted bread.

Ingredients
2 boneless, skinless chicken breasts (about 6 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
4 slices bacon
4 slices sourdough or white bread
2 tablespoons mayonnaise
4 leaves lettuce (iceberg or romaine)
4 slices tomato
4 slices red onion (optional)
Instructions
Preheat grill to medium-high heat (about 400°F).
Pound chicken breasts to even thickness (about 1/2 inch). Brush with olive oil and season with salt, pepper, and garlic powder.
Grill chicken for 5-7 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes, then slice into strips.
Meanwhile, cook bacon in a skillet until crispy. Drain on paper towels.
Toast bread slices on the grill or in a toaster.
Spread mayonnaise on one side of each bread slice.
Assemble sandwiches: layer lettuce, tomato slices, grilled chicken strips, bacon, and red onion (if using) on two bread slices. Top with remaining bread slices, mayo-side down.
Cut sandwiches in half diagonally and serve immediately.
Tips
For extra flavor, marinate chicken in buttermilk or Italian dressing for 30 minutes before grilling.
Serve with potato chips or a side salad.
