Ingredients
2 boneless, skinless chicken breasts (about 6 oz each)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
6 slices bacon
4 slices sourdough or white bread, toasted
2 tablespoons mayonnaise
4 leaves lettuce (e.g., romaine or iceberg)
4 slices tomato
4 slices red onion (optional)
Instructions
Preheat grill or grill pan to medium-high heat.
Season chicken breasts with olive oil, salt, pepper, and garlic powder. Grill for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice into strips.
Meanwhile, cook bacon in a skillet over medium heat until crispy. Drain on paper towels.
Spread mayonnaise on one side of each toasted bread slice.
Assemble sandwiches: On two bread slices (mayo side up), layer lettuce, tomato slices, red onion (if using), grilled chicken strips, and bacon. Top with remaining bread slices (mayo side down).
Cut sandwiches diagonally and secure with toothpicks if desired. Serve immediately.
Tips
For extra flavor, marinate chicken in buttermilk or a simple herb marinade for 30 minutes before grilling.
Use a panini press or heavy skillet to press the sandwich while grilling for a warm, crispy texture.
Store leftover components separately; assemble just before serving to prevent sogginess.
