Ingredients
2 slices sourdough or white bread
2 tablespoons unsalted butter, softened
2 slices cheddar cheese (about 2 oz total)
2-3 slices ripe tomato (about 1/4 inch thick)
Salt and freshly ground black pepper to taste
Instructions
Spread 1 tablespoon butter on one side of each bread slice.
Place one slice of bread, buttered side down, on a work surface. Layer with 1 slice of cheese, tomato slices, and the remaining cheese. Season tomato with salt and pepper. Top with the second bread slice, buttered side up.
Heat a non-stick skillet or griddle over medium heat. Place the sandwich in the skillet and cook until the bottom is golden brown and crispy, about 3-4 minutes.
Carefully flip the sandwich with a spatula and cook until the other side is golden brown and the cheese is fully melted, about 3-4 minutes more.
Remove from skillet, let rest for 1 minute, then slice in half and serve immediately.
Tips
For extra flavor, add a pinch of garlic powder or dried oregano to the butter.
Use a mix of cheeses like mozzarella and provolone for a different taste.
Serve with a side of tomato soup for a classic pairing.
