Ingredients
4 catfish fillets (about 6 oz each)
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper.
Place catfish fillets in a shallow dish or resealable bag. Pour marinade over fish, turning to coat. Refrigerate for 15-30 minutes.
Preheat grill to medium-high heat (about 400°F). Lightly oil the grill grates.
Remove fillets from marinade and place on grill. Cook for 4-5 minutes per side, until fish is opaque and flakes easily with a fork.
Transfer to a platter and serve immediately with lemon wedges, if desired.
