Ingredients
1 lb (450g) cleaned calamari (tubes and tentacles)
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh oregano, chopped (or 1 tsp dried)
1/2 tsp salt
1/4 tsp black pepper
Lemon wedges for serving
Instructions
Rinse calamari under cold water and pat dry. Slice tubes into 1/2-inch rings; leave tentacles whole.
In a bowl, whisk together olive oil, lemon juice, garlic, parsley, oregano, salt, and pepper. Add calamari and toss to coat. Marinate at room temperature for 15 minutes.
Preheat grill to high heat (about 500°F/260°C). Lightly oil grates.
Grill calamari in batches, spreading in a single layer. Cook 2-3 minutes per side until opaque and lightly charred. Do not overcook or it will become tough.
Transfer to a platter and squeeze fresh lemon juice over top. Serve immediately with lemon wedges.
Tips
For extra tenderness, score the inside of the tubes in a crosshatch pattern before grilling.
Serve with a side of arugula salad or crusty bread to soak up the juices.
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
