Ingredients
1 lb fresh green beans, trimmed
3 tbsp unsalted butter
1/3 cup sliced almonds
1 clove garlic, minced
1 tbsp fresh lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh parsley (optional)
Instructions
Bring a large pot of salted water to a boil. Add green beans and cook until crisp-tender, about 3-4 minutes. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain well and set aside.
In a large skillet over medium heat, melt 1 tablespoon of the butter. Add the sliced almonds and cook, stirring frequently, until golden brown, about 2-3 minutes. Transfer almonds to a plate and set aside.
In the same skillet, melt the remaining 2 tablespoons butter over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
Add the blanched green beans to the skillet. Cook, tossing occasionally, until heated through, about 2 minutes.
Stir in the toasted almonds, lemon juice, salt, and pepper. Toss to combine.
Transfer to a serving dish and garnish with chopped parsley if desired. Serve immediately.
Tips
For extra crunch, use whole almonds instead of sliced and chop them coarsely.
To make ahead, blanch the beans and toast the almonds separately, then combine and reheat just before serving.
