Ingredients
1 1/2 cups all-purpose flour
1/2 cup warm water
1/2 teaspoon active dry yeast
1/2 teaspoon salt
1 tablespoon olive oil
1 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Optional fillings: grilled chicken, tomatoes, red onion, feta
Instructions
In a small bowl, dissolve yeast in warm water and let stand for 5 minutes until foamy.
In a large bowl, combine flour and salt. Add yeast mixture and olive oil, mix until dough forms. Knead on floured surface for 5 minutes until smooth. Place in oiled bowl, cover, and let rise for 1 hour.
Meanwhile, make tzatziki: combine yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Refrigerate until needed.
Divide dough into 4 balls. On floured surface, roll each into a 6-inch circle. Let rest 10 minutes.
Heat a dry skillet over medium-high heat. Cook each pita for 1-2 minutes per side until puffed and golden. Keep warm.
To serve, spread tzatziki on pita, add desired fillings, and fold or roll.
Tips
To save time, use store-bought pita and tzatziki.
Grill the pita for a smoky flavor.
Tzatziki can be made a day ahead and refrigerated.
