Ingredients
1 cup long-grain white rice
2 cups chicken or vegetable broth
1/4 cup fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest
2 tablespoons olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions
Rinse the rice under cold water until the water runs clear; drain well.
In a medium saucepan, heat olive oil over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
Stir in the rice and oregano, cooking for 1 minute to toast the rice slightly.
Pour in the broth, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, until the rice is tender and liquid is absorbed.
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork, then stir in parsley. Season with salt and pepper to taste.
Tips
For extra flavor, use homemade broth or add a pinch of saffron.
Leftover rice can be stored in an airtight container in the refrigerator for up to 3 days.
To reheat, add a splash of water or broth and microwave or warm in a skillet.
