Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 4-5 minutes per side. Remove chicken and set aside.
Reduce heat to medium. Add garlic and cook for 30 seconds until fragrant.
Pour in chicken broth and lemon juice, scraping up any browned bits. Stir in oregano.
Return chicken to skillet. Bring to a simmer, then cover and cook for 10-12 minutes until chicken is cooked through.
Remove chicken again. Stir heavy cream into the sauce and let simmer for 2-3 minutes until slightly thickened.
Return chicken to skillet, add olives, and spoon sauce over chicken. Garnish with parsley and lemon slices.
