  2. Make small incisions in the lamb pieces and insert garlic slices.
  3. In a large bowl, combine lemon juice, olive oil, oregano, rosemary, salt, and pepper. Add lamb and toss to coat. Marinate for at least 30 minutes (or overnight in fridge).
  4. Place lamb in a large roasting pan or Dutch oven. Scatter potatoes and onions around the lamb. Add bay leaves.
  5. Pour broth and white wine over the lamb and vegetables.
  6. Cover tightly with foil or lid and roast for 2.5 hours.
  7. Remove cover, increase oven temperature to 200°C (400°F), and roast for another 30 minutes until lamb is browned and potatoes are tender.
  8. Let rest for 10 minutes before serving. Discard bay leaves.
