Ingredients
1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
1/4 cup olive oil
3 tbsp lemon juice
4 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
8 wooden skewers, soaked in water for 30 minutes
For serving: warm pita bread, tzatziki sauce, sliced tomatoes, red onion, cucumber
Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (or up to 4 hours).
Preheat grill or grill pan to medium-high heat. Thread chicken onto skewers, dividing evenly.
Grill skewers, turning occasionally, until chicken is cooked through and has nice char marks, about 10-12 minutes (internal temperature 165°F).
Remove from grill and let rest 2 minutes. Serve with warm pita, tzatziki, and fresh vegetables.
Tips
For extra flavor, add a pinch of smoked paprika to the marinade.
If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Serve with lemon wedges for squeezing over the souvlaki.
