Ingredients
1 lb pork belly or pork fatback, skin on
1 tbsp salt
1 tsp black pepper
1 tsp garlic powder
1 cup water
Instructions
Cut pork belly into 1-inch cubes, leaving skin attached.
In a bowl, toss pork cubes with salt, pepper, and garlic powder.
Place pork cubes in a heavy-bottomed pot or Dutch oven. Add water.
Bring to a boil over high heat, then reduce to low. Cover and simmer for 45 minutes, stirring occasionally, until pork is tender and most water has evaporated.
Uncover, increase heat to medium, and cook, stirring frequently, until pork cubes are golden brown and crispy, about 15 minutes. Drain on paper towels.
Let cool slightly before serving. Store in an airtight container at room temperature for up to 2 weeks.
