Ingredients
3 cups old-fashioned rolled oats
1 cup raw almonds, roughly chopped
1 cup raw pecans, roughly chopped
1/2 cup unsweetened shredded coconut
1/2 cup pure maple syrup
1/3 cup coconut oil, melted
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup dried cranberries or raisins
Instructions
Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
In a large bowl, combine oats, almonds, pecans, and shredded coconut.
In a small bowl, whisk together maple syrup, melted coconut oil, salt, cinnamon, and vanilla extract.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola in an even layer on the prepared baking sheet.
Bake for 25-30 minutes, stirring halfway through, until golden brown.
Remove from oven and let cool completely on the baking sheet (it will crisp as it cools).
Once cool, stir in dried cranberries or raisins. Store in an airtight container.
Tips
For extra clusters, press the granola down firmly before baking and don't stir too much.
